Cooking with Judith is the latest release from Judith Briles. Released in February 2025, it is a collection of recipes Briles has made for friends and family.

In Cooking with Judith, author Judith Briles shares over 50 of her recipes that she casually put together—sometimes with the opening of the refrigerator—What can I do tonight? … to the pantry—What can make for tonight to what’s in here? A handful here and a few tablespoons there. Usually, the goal was a tasty, easy-peasy concoction of some sort that was not complicated and didn’t take a lot of work.

For Judith, cooking has always been a way for her to “re-root” when she returns home from a speaking gig on one of her books. A few hours in the kitchen erased the hassles of travel.
What you have are many of her friends’ favorites—some everyday comfort like Chili Relleno Chowder or Italian Tortellini Soup. Salads are welcome anytime. Favorites include Avocado Corn SaladApple or Pear Pecan Salad with Honey Mustard Dressing, and Summer Beet Salad. For dessert, a slice of Kahlua Cake with amazing crème is a gift to your taste buds.

My Opinions

Cooking with Judith contains around 50 recipes in just over 100 pages. It was published through a small, independent publisher, Mile High Press, and it shows. I don’t mean that in a bad way at all, but the cookbook gives off the same vibe as a community cookbook sold to raise money. You know the one, I’m sure we all have at least one in our collection.

Briles includes a story behind each recipe, who she shares it with, and when it would be perfect to serve. She also includes notes throughout the recipes, explaining her reasoning for specific ingredients and any available substitutions.

Although I didn’t make any of the recipes, there were a few in the book that caught my attention. I mean, who wouldn’t want to try some Mexican Spaghetti Carbonara or Oktoberfest Pork Tenderloin?
