Happy Foodie Friday, y’all! I’m back with a recipe round-up this week. The end of June and the beginning of July is typically considered strawberry season. Who doesn’t love seeing all those delicious red berries waiting to be eaten? Honestly, strawberries are one of my favorite fruits. They’re perfect for eating right from the vine, on shortcakes, or even mixed into a yogurt parfait. As it’s the end of June, strawberry season is upon us!

Strawberry Season: A Recipe Round-Up

Surprisingly, my husband decided to go berry picking for Father’s Day this year. I was surprised for a couple of reasons. One, I know it can be expensive. Two, he has seasonal allergies, and this is the time of year when they are barely settling down. Thankfully, we live in Ontario, Canada, and don’t see the layers upon layers of pollen like we do in other places.

We had five buckets of berries at the end of the picking, and my youngest found a toad in the field. No worries, the toad stayed behind to do toad things. It turned out each bucket had an average weight of 3.5 pounds. That’s a lot of strawberries! We sent two containers to the home with our oldest and her partner. Then, my husband shared some with his parents. That still left us with a lot of strawberries to consume! Don’t get me wrong, they were a tasty treat at work. But I wanted something else. So, I turned to Pinterest and found several recipes to try.

Recipe Round-Up

Strawberry Chocolate Chip Muffins from Melanie at Gather for Bread

The yield on this recipe is 12-14 muffins. Yet I managed to get 18. Less than 24 hours later, guess how many are left? Six!

One substitution I made with the recipe is sour cream instead of Greek yogurt. It is a common substitution.

I also recommend storing leftovers in the fridge, as they use fresh fruit. A quick turn in the microwave will make them just as tasty as if fresh from the oven.

Strawberry Crumb Bars from Jamielyn at I Heart Naptime

Warning for this recipe: these bars tend to evaporate!

The recipe calls for 1 1/2 to 2 cups of chopped strawberries; the more, the merrier!

These bars are best stored in the fridge if you have any to store. They are perfect with a cup of tea or coffee.

Strawberry Cream Scones from Jennifer at Seasons and Suppers

These are the first scones I ever made. And my husband has requested them multiple times!

The best tip for these scones is to ensure everything is chilled as you go. Do not skip placing these in the freezer before baking.
