Happy Friday, y’all! It is the second Friday in December. Can you believe the month is almost half over? Are you going crazy with all of the holiday things? Me too! Sometimes, it gets so ridiculous that I forget about breakfast. So today, I’ve decided to share some of my favorite muffin recipes. Muffins are a great way to have a power-packed breakfast without much work. One might say that these are magical muffins!
What makes muffins so magical? They can be loaded with fruit, vegetables, or even chocolate. Most of the time, muffins can be made in under an hour. And that includes clean-up time. After they’ve cooled, you can store most muffins in the freezer, which makes them great for a grab-and-go meal. Toss them into your bag, and they’ll be thawed by lunchtime. Or pop them in the microwave for 30 seconds to warm them up for breakfast. Trust me, all these magical muffins will start your day on the right foot!
These muffins would also be great to bring to a work potluck or have on hand for breakfast on Christmas morning.

Spiced Zucchini Carrot Bread from Jen at Peanut Butter Runner
Yes, I know the recipe is labeled as a bread recipe. But Jen gives instructions for making these into muffins. There are walnuts included in the recipe, but I have left them out with no problems at all. The flavor of these muffins is so cozy, with nutmeg and cinnamon.
Easy Apple Oatmeal Muffins from Amy at House of Nash Eats
How can you go wrong with a muffin that has apples and oatmeal? And there’s a streusel topping? Even better!
Apple Cheddar Muffins from wanna come with?
Apples and cheddar cheese together? Sign me up! These are wonderful at room temperature but even better when warm.
Chocolate Banana Crinkle Muffins from Averie at Averie Cooks
These chocolate muffins are SO fudgey! And packed with banana goodness.
Popeye Muffins from Jenny at The Green Forks
Why are these called Popeye muffins? Because they contain spinach. Don’t worry; they are perfectly balanced with the bananas. These are perfect for someone trying to cut back on sugar, as they aren’t sweet. You can add nuts or chocolate chips to make them even more special.
One Bowl Blueberry Muffins from Melissa at A Sparkle of Genius
This is my go-to blueberry muffin recipe. I love it so much that I’ve written a blog post about it. You can find it here. It’s perfect for baking without spending hours cleaning up.
Fluffy Chocolate Chip Muffins from Pamela at Brooklyn Farm Girl
I had to make these muffins multiple times over one weekend because they kept evaporating from the cooling rack.
Blueberry Jam Muffins from Chrissi at First Home Love Life
That’s right, these muffins are made with jam! While the recipe calls for blueberry preserves, I’ve made these with various jams. I would not recommend jelly because it doesn’t mix well. Make sure you line your muffin pans! I would recommend using thicker bakery paper or silicon liners, as these muffins may be a bit sticky with the jam.
