Happy Foodie Friday y’all! How is your July going so far? Have you had any delicious blueberries yet? Why would I ask that? Well, because July is Blueberry Month! And July 11 is Blueberry Muffin Day. So in honor of the celebrations, I thought I would share my favorite blueberry muffin recipe. These easy one-bowl blueberry muffins are so easy to whip up that you could celebrate blueberry muffin day every day!
Let me start by saying, this is not my recipe. I found it over at A Sparkle of Genius. But it is a recipe I have made multiple times and truly enjoy making and eating!
Why is This Recipe a Favorite?
Simply put, the muffins are perfection! If you can make muffins using a mix from the baking aisle of your favorite grocery store, you can make these muffins.
- The ingredient list is simple, and you probably have everything on hand already. Flour, sugar, salt, baking powder? Vegetable oil, egg, milk, vanilla extract? And, of course, blueberries! See, I told you that you have everything on hand.
- Clean-up is a snap as well! One bowl, one large liquid measuring cup, a couple of measuring spoons and cups, and a whisk or spoon? See, not a lot to wash up either!
- Short on time? Perfect, these muffins come together in just a few minutes. And only take about 15 minutes to bake.
- Do you feel like experimenting a little? Go for it! You can sprinkle sugar on top before baking to get a bit of a crust or leave it off. Don’t have vanilla extract? That’s ok. You can use almond or even lemon instead.
- Fresh blueberries are in season and affordable? Use them! You’ve only got a forgotten bag of blueberries in the back of your freezer? That works too! Not quite enough blueberries? Add in some other berries, or chocolate chips.
