Happy Foodie Friday y’all! How has January been treating you? For me, it has been a crazy month at work, and thus my blog has suffered. Originally I had a post planned for today to share a childhood favorite. But alas, due to work wreaking havoc on my schedule, that isn’t happening this week. Before you say, but Pam, you still have a week until National Chocolate Cake Day, I know that I do, but life is still very out of whack for me with work. Alas, I will have to make do with the post as best I can.

Chocolate Mayonnaise Cake

Before you say anything, like EW or Gross, hear me out! Chocolate Mayonnaise Cake is a brilliant invention. Why? Because it cuts back on the measuring and mixing of regular chocolate cakes. How? Think about what the main two ingredients are in mayonnaise-eggs and oil. What are two ingredients in a cake? Eggs and oil! When two ingredients are already combined, getting the cake to the oven is that much quicker. And washing a measuring cup that had mayonnaise in it is easier than one that had oil, especially if you don’t like using super hot water.

While I love sweets and baking, I am not a huge fan of most chocolate cakes. Why? Because they are generally dry. And there is nothing that turns me off quicker than a dry cake. When I see a chocolate dessert that isn’t pudding or mousse-based, my brain thinks of brownies. And the best brownies are moist and fudgy. For some reason, most chocolate cakes just don’t hit the same mark. But there is one exception! Chocolate Mayonnaise Cake.

My family’s recipe was made so often that the page in the cookbook was covered in cocoa powder! Another bonus was the cake didn’t need more than a sprinkling of powdered sugar for a topping.

Oh, how I wish I could share the recipe with y’all, but I haven’t made it in years, and the cookbook was lost to the ravages of time and weather. Darn hurricanes!

I have searched for a similar recipe on Pinterest, but none of them seem to have the same feeling like the one from my childhood. Of course, everything in our memories tastes better and has a lot fewer calories.

  1. I’ve never tried making a mayonnaise cake before, but it does make sense. I’ll have to look into some kind of chocolate cake for next weekend, though. Thanks for the advance notice! 😉

  2. I wanted to say ew gross when I first started reading but your explanation totally makes sense and I love chocolate cake enough that I would definitely try a cake made this way. 🙂

    1. So many people want to saw ew gross when they hear of mayo in a cake. But when you break it down, it makes perfect sense. I hope you are able to try some soon.
